So here are the four ways that I use when smoking overnight.

Smoke your meat first and then hold it in the oven

It is one of the most effective ways to serve perfectly smoked brisket to your guests without sacrificing your night’s sleep.

In this method, You need to hold the smoked brisket in an oven and serve it the next day.

I personally prefer this method because it gives me so much control over the process.

It basically helps you to preserve the same flavour of meat smoked hours before serving it to guests.

Although you will need to practise to get better at it.

To perform this method, you basically have to smoke your brisket the night before serving, as you generally do.

After it has been smoked, you then need to rest it for a few minutes to let it breathe and allow the flavours to sink in .

After that, you need to set your oven temperature at around 150 °F–160 °F and place your meat in it.

You need to set an alarm for if the temperature of the oven increases above 170°F or drops below 150°F.

Some ovens might not have a direct way to set the temperature at 150°F, but there are some ways around it.

You can first set the temperature at -15°F and then at 170°F .

It will then adjust your oven to around 150°F.

Your meat will be safe in the oven overnight, and then you can serve it the next day.

But during the night, you need to be really careful about the temperature of the oven.

If the temperature increases or decreases below the set temperature, then you should wake up and readjust it.

Minions method

The Minions method is one of the most common smoking techniques used in smoking tougher cuts of meat like brisket.

It decreases the effort you need to put into the smoking and, if done correctly, it can keep producing smoke for around 10-15 hours.

In general, the minions method involves smoking meat overnight in charcoal smokers.

It depends on the arrangement of meat and charcoal within the charcoal box to keep the charcoal burning overnight without any tweaking.

Here is a step-by-step guide to smoking by the Minions method.

  1. First, take unlit charcoal and place it in a single layer in the charcoal box.
  2. Additionally, you need to keep a small portion empty at the center. Then place some wood chunks on the layer of charcoal.
  3. Now light some charcoal. Light it by using a charcoal chimney and then place it in the centre of the charcoal layer in the charcoal box.

These steps will help your smoker produce enough heat and smoke to cook your meat overnight.

However, you still need to check the temperature of the smoker and the colour of the smoke being produced from time to time.

Snake method

The second method for smoking your meat overnight is by using snake method.

The Snake method is a method of smoking meat by arranging your fuel in a snake shape.

It will result in the slow burning of your charcoal, which can help you smoke overnight.

First of you need to take a bag of unlit Charcoal and arrange it in a C- shaped structure within the firebox.

Then place some wood chunks over these charcoal pieces.

It is also very much similar to the other two methods of arranging charcoal but the arrangement is a bit different.

  1. First of all you need to take a bag of unlit Charcoal and fill the smoker charcoal box with it.
  2. You need to mix some wood chunks in between the charcoal randomly
  3. After that place few pieces of lit charcoal on the top of pile .
  4. Now add few wood chunks over the lit charcoal but make sure to not place too much because it can smother the flames.

The charcoal will burn gradually from top to bottom throughout the night.
