Ingredients:
- 1 pound green beans, trimmed
- 2 tablespoons butter
- 2 cloves garlic, minced
- Zest of 1 lemon
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions:
- Bring a pot of salted water to a boil. Add the green beans and cook for 2-3 minutes, or until tender-crisp. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for 1-2 minutes, until fragrant.
- Add the blanched green beans to the skillet and toss to coat with the garlic butter.
- Stir in the lemon zest and lemon juice. Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, until the green beans are heated through and well coated with the lemon garlic butter.
Caprese Salad:
Ingredients:
- 2 large ripe tomatoes, sliced
- 8 ounces fresh mozzarella cheese, sliced
- 1/4 cup fresh basil leaves
- 2 tablespoons balsamic glaze
- Salt and pepper to taste
Instructions:
- Arrange the sliced tomatoes and mozzarella cheese on a serving platter, alternating them in a decorative pattern.
- Tuck the fresh basil leaves in between the tomato and mozzarella slices.
- Drizzle the balsamic glaze over the salad.
- Season with salt and pepper to taste.
- Serve immediately as a refreshing and light side dish.
