If the parchment paper is exposed to direct heat, then the sheet can burst into flames.
This sudden fire can affect both the construction of the smoker and the food being grilled.
So you really need to be careful about exposing it to flames.
Another thing to keep in mind is that fire doesn’t necessarily need to be the result of a direct flame from the firebox.
